(Alliance News) - BSF Enterprise on Tuesday said it marked a major step forward towards producing the UK's first full-scale cultivated meat fillet, which it hopes to showcase in early 2023.
Shares in the London-based biotechnology investment firm rose by 83% to 10.06 pence in London on Tuesday midday, after it successfully produced three small prototype fillets of cultivated meat.
The three small fillets were approximately 30 millimetre in height and 15mm in diameter, weighing an average of 5 grams.
Tests were conducted to determine its quality and similarity to conventional meat, finding the fillets seared easily upon being pan-fried and caramelised with charring and crisping on its surface similarly to barbecued meat. Aromas were also identified to be similar.
"A further industry milestone is that our prototypes are 100% animal meat, having nativelike structure without the need for plant-based scaffolds. This structure without scaffold was achieved through culturing the fillets with City-mix, our patented animal-free media which represents the next generation in growth agents," said Che Connon, chief executive at BSF Enterprise subsidiary 3D Bio-Tissues.
City-mix is a critical intellectual property of BSF Enterprise, providing the firm rights to the technology.
